Miso and Health
Scientific studies have shown that miso has a variety of health benefits. In fact, many old Japanese sayings about miso are related to health, suggesting that the health benefits of miso are well known to the Japanese people. In the first half of this talk, Dr. Niida will present his findings on the health benefits of miso. In the second half of the talk, he will introduce the recent progress and future plans of the MISOMICS project, which is currently conducting metagenomic analysis of microorganisms in miso to learn about the microbiome in this popular fermented food.
Atsushi Niida
Bioinformatics (data science in biology and medicine) researcher at a university. Originally an expert in genome analysis of cancer was his field of expertise, but in recent years, personal health issues have led him to pursue research interests in meditation, yoga, and fermented foods.
